I am leaving tomorrow to go on a 10 day venture that will visit the DR, Haiti, St. Thomas, and PR. I will be sailing Royal Caribbean.

Cruise sanctioned shore excursions are well organized, but pretty expensive. Some places it's more fun to get a tour or something near the boat. Also you won't need to eat anything when you get back for a while.

A few tips:
Check with your phone company to see where you'll have coverage. On our last cruise I was able to use data in PR without any charges. All other destinations would probably require a non-standard plan or overages.
If you like kayaking, I would recommend VI Eco Tours in St. Thomas. http://www.viecotours.com/ . It was one of our favorite excursions.
If you're cheap like me, bring some ziplock bags. At breakfast, take some muffins, fruit, etc. and put it in the bags. Put these in your backpack for the excursions. All the walking, kayaking, etc. always made me hungry, and this way I didn't have to pay tourist prices for stuff to eat on the shore.
Check out Royal Carribean's alcohol/soda policy. On Carnival, you can bring a bottle of wine and a 6-pack of soda on board per person, but only on departure.

But with the cruise excursions, you know you won't accidentally miss the boat - they'll get you back on time. If you're don't mind doing the planning, you can save a bundle and see some really neat stuff. Otherwise, you really are paying for the convenience. I'm all for that, as it allows me to sit back and relax a bit more while on shore.

ALRIGHT CRUISE PARTY TIME!
OK, so in seriousness now lol. when my wife and I took our honeymoon cruise on Royal Caribbean we found a NICE trick with the bars.
It may be more fun to go to a different bar on the ship every night, BUT if you go to the same bar and find the same bartender by day 3-4 your drinks will turn into doubles for the cost of singles. Also, make sure to tip in CASH even if you pay with your room card. They typically don't declare their tips for taxes if they are in cash but they have to declare through the room card charge. I gave our bartender cash one night and he was like thank you thank you thank you. I said do you prefer cash to the card? Because that's not a big deal I can pay you in cash? "oh that would be very kind of you!".
Dude was doing EVERYTHING for us, including running to other bars when I drank his bar out of bacardi 8 (great stuff btw, 8 year aged, as far as rum goes -its a winner).
One night we even wanted to just grab a couple drinks and head up to the cabin (long day of excursions). I asked for a couple beers, he said "you like Corona? I'll be right back". He charged me for 2 and gave me a bucket with 6 of them on ice.
So for the TL;DR - Tip in cash, find your favorite bartender and stick with him.
Also, in Aruba we took the city bus to the beach from the docks, cost us 1$ round trip for the both of us, the excursion to the same beach was 135$ each (though they got booze and food on the beach, we didnt).
